A pot roast belongs to the second kind. It begins in the morning with vegetables, a well-seasoned roast, and the confidence that time will do what no shortcut can.

That feels exactly right for What Dean Left Behind. Dean never intended the things he left behind to become a map, yet every quiet act of generosity continues shaping the people he loved.

This is the meal Dean would have insisted was not anything special.

Everyone else would know better.

Prep: 20 minutes   ·   Cook: 8 hours slow cooker or 3½ to 4 hours Dutch oven   ·   Serves: 6 to 8

Ingredients

  • 3½ to 4-pound chuck roast
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1½ pounds baby Yukon Gold potatoes
  • 4 large carrots, cut into chunks
  • 3 celery stalks, cut into large pieces
  • 1 large yellow onion, cut into wedges
  • 5 cloves garlic
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 bay leaves

How to make it

  1. Pat the roast dry and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Heat the oil and sear the roast for 4 to 5 minutes per side. Remove it.
  3. Cook the onion for 3 minutes, then stir in tomato paste for 1 minute.
  4. Add broth and Worcestershire, scraping up the browned bits.
  5. Return the roast and arrange the vegetables, garlic, and herbs around it.
  6. Slow cooker: cook on LOW for 8 hours or HIGH for 5 hours. Dutch oven: cover and bake at 300°F for 3½ to 4 hours.
  7. Remove the herbs and spoon the cooking juices over each serving.
