Braised chicken with carrots, parsnips, potatoes, and herbs

Marcus Bell cooks this meal slowly. That matters. It is not an impressive flourish assembled in ten minutes. It is hours of chopping, browning, waiting, and watching.

Pam has spent decades being the person who feeds everyone else in every way except at the table. Marcus puts a full plate in front of her and does not ask her to earn it.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 3 carrots, cut into thick pieces
  • 3 parsnips, cut into thick pieces
  • 1 pound baby Yukon Gold potatoes, halved
  • 2 tablespoons tomato paste
  • 1 cup dry white wine or additional chicken broth
  • 2 cups low-sodium chicken broth
  • 2 teaspoons Dijon mustard
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 bay leaf
  • 1 tablespoon unsalted butter

How to make it

  1. Heat oven to 325°F. Pat the chicken dry and season with salt and pepper.
  2. Heat oil in a Dutch oven. Brown chicken skin-side down for 7 minutes, then turn and cook 3 minutes more. Transfer to a plate.
  3. Cook onion for 5 minutes. Add garlic and tomato paste; cook 1 minute.
  4. Pour in wine and scrape up every browned bit. Stir in broth and Dijon.
  5. Add carrots, parsnips, potatoes, thyme, rosemary, and bay leaf. Nestle chicken on top, skin-side up.
  6. Cover and bake 45 minutes. Uncover and bake 20 minutes more, until the chicken is tender and the skin is browned.
  7. Remove herbs. Stir butter into the sauce and spoon it over the vegetables.

Use bone-in thighs. They stay tender through the long braise and give the sauce the depth that makes a second helping feel inevitable.
