Hartley comes home from the restaurant world, so her finale recipe cannot whisper from the corner of the buffet. These turkey legs arrive bronzed, heavily seasoned, and covered in onion gravy. They feed a crowd and look like a celebration.
Serve them with rice, mashed potatoes, cornbread dressing, or anything willing to catch the gravy.
Ingredients
- 6 turkey legs
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 2 large yellow onions, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 celery stalks, sliced
- 5 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 4 cups turkey or chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 tablespoons butter
- Sliced green onions and parsley, for serving
How to make it
- Heat oven to 325°F. Pat turkey legs dry and season with Cajun seasoning, paprika, garlic powder, and black pepper.
- Heat oil in a large Dutch oven. Brown turkey legs in batches, about 4 minutes per side. Transfer to a platter.
- Cook onions, bell peppers, and celery for 8 minutes. Add garlic and cook 1 minute.
- Sprinkle flour over the vegetables and cook for 2 minutes. Slowly stir in broth and Worcestershire until smooth.
- Add thyme and bay leaves. Return turkey legs to the pot, spooning gravy over them.
- Cover and bake for 2 hours. Uncover and bake 20 to 30 minutes more, until very tender and the gravy has thickened.
- Stir butter into the gravy. Finish with green onions and parsley.
