The countdown to the July book launch had taken over my desk, my calendar, and nearly every spare inch of my attention. Dinner needed to be hearty, dependable, and almost entirely hands-off. This no-fuss sausage-and-peppers recipe went into the slow cooker while I worked through cover checks, launch details, and the final mountain of little tasks that arrives before a book meets its readers.

I made Italian sausage and peppers in the crockpot with tomato sauce, then tucked everything into split Italian bread for a hearty sandwich supper.

This is a comfort-food post, not a fussy recipe-card ceremony. Adjust the peppers, sauce, and bread to what your kitchen already has waiting.

What I used

  • Italian sausage links
  • Red and green bell peppers, sliced
  • Onion, sliced
  • Tomato sauce or marinara
  • Italian seasoning, garlic, salt, and pepper
  • Split Italian bread or hoagie-style rolls

How I made it

  1. Add the sausage, sliced peppers, onions, and tomato sauce to the crockpot.
  2. Season with garlic, Italian seasoning, salt, and pepper.
  3. Cook until the sausage is tender and the peppers and onions are soft.
  4. Slice the sausage on the diagonal, then pile it back into the sauce with the peppers and onions.
  5. Serve on split Italian bread with plenty of sauce tucked into the roll.

It is simple, cozy, and very much the kind of meal that belongs beside a book, a soft lamp, and one more chapter.
